The Bikini Cocktail
Serves 10 servings
Ingredients for the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (produces 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Place the listed items into a pot, heat until it reaches a light boil, agitating until the sugar dissolves. Next, turn off the heat allowing it to cool down entirely. Transfer to a sealable bottle, seal and refrigerate it in the fridge, it will last for about one month.
Preparing the Premix: Mix every liquid ingredients into one large bottle, allow it to infuse for 60 minutes, then pass it through best through muslin, making it fully clarified.
To serve: Pour 85ml from the batch mix into a mixing glass containing ice, and stir lightly for a minute to chill. Filter to a cold coupe glass or equivalent, garnish with the cranberries and finish using a quick spritz of mandarin oil above the glass.
